Huila, from our railway arch to your kitchen

We roast every Tuesday in our arch in Manchester, and this week the star is Colombia Huila. Here's an easy way to get the best from it. Weigh 15g of beans and grind them medium, a bit coarser than espresso. Heat your water just off the boil, then pour a little over the grounds and let them bloom for thirty seconds. That's the coffee releasing gas, and it's rather satisfying to watch.

Pour the rest slowly in circles and aim to finish in about three minutes. Taste it, then tweak the grind. Too sharp? Go finer. Too flat?

Go coarser. Nobody's marking you, and every cup teaches you something. Tell us what you find.
