Smoky chicken thighs, no fuss

We smoke our chillies over oak in an old pottery kiln, then leave them to ferment for six weeks. No shortcuts, just smoke and time. Now put it to work. Mix a few spoonfuls of Kilnhouse Smoked Chipotle Sauce with a squeeze of lime and a glug of oil.

Rub it over chicken thighs and leave for an hour if you can wait. Roast hot until the edges char and the glaze goes sticky. Serve with rice, slaw and more lime. Go steady the first time, then go bolder.
