Made where the apples fall

There is no hurry in an orchard. The apples ripen when they are ready, we press them ourselves, and nothing comes from concentrate. That is how three generations of our family have made cider in Herefordshire, and it is how Highdown Orchard Dry Sparkling Cider is made today.

For a simple autumn supper, serve a chilled bottle alongside a ploughman's board: a sharp farmhouse cheddar, a few crisp apple slices, good bread and a spoonful of chutney. The dryness cuts through the richness of the cheese, and the bubbles keep things light. Take your time over it.

Lay the table, light a candle if the evenings are drawing in, and let the cider do the rest. Please enjoy responsibly.
